Do you ever have a hard time finding a recipe for all the items you pick up at the pantry? Gwen, one of our pantry customers, came up with a great pasta recipe that uses many items that we regularly have in the pantry. This recipe is also great because it is very healthy, incorporating fresh veggies, protein and whole grains. Thanks to Gwen for sharing, and please enjoy!
Gwen’s Pantry Pasta
Ingredients:
Whole wheat pasta
1 can of tomato puree
1 can of clams
1 small can of chicken
1 onion, chopped
2 cloves garlic, minced
2 cups kale, chopped
1 T balsamic vinaigrette
1 chicken buillon cube
2 T brown sugar
salt and pepper, to taste
Preparation: Cook the pasta according to package instructions. In a medium saucepan, sautee the onion and garlic in a little bit of olive oil over medium heat until the onions become translucent. Add the kale, a couple tablespoons of water, the buillon cube, and the brown sugar. Cover the pan so that the kale steams and wilts. Cook until the kale becomes tender, adding a little more water to prevent the mixture from sticking, if necessary. When the kale is tender, add the remaining ingredients. Continue to cook over medium-low heat for about 15 minutes. Serve the sauce over the pasta, and enjoy!
